“Necessity is the mother of invention” holds true in my household. I DESPISE the waste of food. These strawberries had a few solid hours left before it would meet its fuzzy demise, and the lemons…there were just so many. I needed to concoct something quickly. Strawberry lemonade immediately came to mind. It’s quick, simple and perfect for summer.
STRAWBERRY LEMONADE with MINT
INGREDIENTS:
- 5 lemons, juices
- 7-10 strawberries
- 5 tbsp. creamed honey (6-7 tablespoons normal honey)
- 7 mint leaves
- 6 c. water
DIRECTIONS:
- Chop the berries, tear the mint leaves and add both to a bowl. Add the honey and mash until the mint is bruised and the strawberries become soft.
- Pour berry mash into a pretty pitcher (I wish I had a glass one!) and add the lemon juice and water.
- Refrigerate until chilled and serve over ice. Use within 3 days.
